Who doesn't want to slurp noodles at any time of day? This quick and easy rice noodle recipe with the healthiest ingredients can satisfy all your noodle cravings. Let's learn how to make pad thai or rice noodles at home.

  • 300 grams rice noodles (readily available in Asian supermarkets)
  • 2 tbsp vegetable oil
  • ½ collard beans
  • ½ cup finely chopped carrot
  • ½  cup finely chopped cabbage
  • ½ cup bok choy
  • ½ cup chopped shallots and scallion
  • 1 tsp finely cut lemongrass
  • 1 cup finely cut chicken (vegans can choose to add mushrooms or stir fry tofu)
  • 1 tbsp finely chopped garlic
  • 1 cup coconut cream/ milk
  • 1 tsp green or red chili sauce
  • Salt
  • Pepper as per taste

A yummy treat for every meal!

  1. Pour water into a skillet and let it boil for some time. 
  2. After that, put rice noodles into the water and let them cook for about 5 minutes.
  3. Take another pan and add oil. 
  4. Now, add garlic along with all the finely cut vegetables, and stir-fry for some time.
  5. Take out the rice noodles from the water and spread them on a plate. Check if they are cooked properly, and heat them again if required.
  6. Add the coconut cream or milk and salt and pepper to the stir-fried vegetables.
  7. Now, add rice noodles to this mixture.
  8. Add some chili sauce to taste.
  9. Cook for 5 minutes and your yummy Thai bowl is ready.
  10. Garnish with finely cut lemongrass.

Chef Tip: Rice noodles are soft in texture. So, there is no need to boil them directly like other kinds of pasta and spaghetti.
