- 5–6 chopped or minced garlic
- 1 large or 2 medium-sized
- Chopped onions
- Spring onions
- Green chilies

- Soy sauce
- Vinegar
- Salt to taste

- Start boiling the noodles as per the package instructions.
- Before you begin cooking noodles, it's a good idea to prepare your onions and garlic. Start chopping onions and garlic finely.
- Take a large pan and pour in some olive oil. Once hot, add the garlic cloves and sauté garlic for about two minutes until its strong smell goes away.
- Next, add chopped spring onions, green chilis, onion slices, and Cook for a few minutes until the onions are tender.
- Pour in some tomato sauce, chili paste and salt, and black pepper to taste; cook for about 2-3 minutes, constantly stirring to prevent it from burning.
- Combine the boiling noodles (drain them first), vinegar, and soy sauce in a mixing bowl. Cook it for another 2-3 minutes, occasionally stirring so that you can prevent burning the mixture.
- Once done, garnish with freshly chopped parsley leaves from spring onions greens and serve warm on a plate.
Chef Tip: Noodles cook nicely when there is plenty of room for it to spread. Don't cram your favorite noodles into a little saucepan. It's also important to make sure your ingredients are prepped before starting to cook noodles.
