  • Active dry yeast
  • Bread flour
  • Warm water
  • Cane sugar

Sweet, Savory, Gorgeous, and Truly Irresistible!

  1. Take 4 ½ cups flour and 1 envelope of dry yeast in a mixer bowl with the dough hook attachment. Add 2 1/4 cups of warm water (110oC) to the bowl and mix at medium speed until all the ingredients mix well.
  2. Add 1 ½ tsp salt and mix at a low speed for around 3 minutes. Now, set the speed to medium and blend for another 30 seconds. 
  3. Cover the bowl with plastic wrap and keep it in a warm place until it expands. It will take around 2 hours.
  4. Lightly flour your tabletop and transfer the dough to it. Spread the dough, fold it from all the edges properly, and tap off any excess flour. Now, put the dough in a large bowl. Again, cover it with plastic wrap and leave for 1 hour. 
  5. Preheat the convection oven to 450 degrees for about 45 minutes.
  6. Apply 1/3 cup oil all over a 14-by-3-inch round cake pan. Transfer the dough into the pan. Now, dip your fingertips in the oil and push the dough out towards the sides of the pan. 
  7. Toss 14 ounces (or as per your taste) of grapes in a bowl with the remaining oil and arrange them all over the dough by gently pressing them. Again, cover it with a wrap and set it aside for 45 minutes.
  8. Sprinkle a generous amount of sugar, flaky sea salt, and oil.
  9. Bake for 30 to 35 minutes and then serve the warm Grape Focaccia.

Chef Tip: The dough should be sticky and loose. However, try to incorporate flour as little as possible while folding the dough, or it may become hard.
