Enchiladas are Mexican delicacies cooked with lots of cheese and meat filling in a tortilla wrap baked till they almost melt in your mouth. Let's see how to make quick and easy enchiladas.

  • 8 corn tortilla wraps 
  • ½ cup chopped onions
  • ½ cup chopped tomatoes
  • ½ tbsp garlic paste
  • ½ cup jalapeños or 1 tbsp green chilies
  • 2 cups cheddar cheese
  • ½ cup water
  • 1 tsp Mexican seasoning or oregano

An easy Tex Mex cheesy delight for a perfect dinner with friends and family.

  1. Heat a flat pan and put a little oil in it. Lightly fry a tortilla to make it crispy.
  2. Take another pan, add oil, and cook garlic, onions, and tomatoes for 5-10 minutes or until they turn mushy. Add jalapeños, Mexican seasoning or oregano, salt, and pepper and cook. 
  3. Preheat the oven to 375 °F and start making tortilla rolls by filling them with cheddar cheese. You can add a bit of cooked vegetable mixture if you like. 
  4. Place these cheese-filled rolls in the microwave casserole and top them with the prepared vegetable sauce.
  5. Add another layer of grated cheese to make it extra cheesy.
  6. Bake it for 15 minutes, till the cheese turns golden and fluffy.
  7. Serve it with salad.

Chef Tip: You can use minced meat or any vegetable as tortilla filling. Either way, your enchiladas will be amazing.
