List of ingredients:

  • Dumpling wrappers - 30
  • Egg - 1, large
  • Rice wine vinegar - 2 teaspoons
  • Light soy sauce - 2 teaspoons
  • Sesame oil - 2 teaspoons
  • Ginger - 2 teaspoons, minced
  • Chinese cabbage - ½ cup, chopped
  • Scallions - 4 tablespoons, finely chopped
  • Black pepper - 1 teaspoon, ground
  • Salt to taste

Pockets of warmth with an explosion of flavor

  1. Mix the minced chicken, egg, rice wine vinegar, soy sauce, sesame oil, ginger, cabbage, scallions, pepper, and salt in a large bowl.
  2. Take a dumpling wrapper, add a teaspoon of the filling in the center.
  3. Use a little water to wet the edges of the wrapper, and then seal it. Make sure there are no air bubbles. You can pleat the outside by using a little more water to wet the outer edges of the folded dumplings.
  4. In a lined steamer, preferably a bamboo steamer, steam your dumplings for 8-10 minutes.
  5. Serve with soy sauce or with a dipping sauce of your liking.

Chef Tip: If you’d like meatier dumplings, you can opt out of using the Chinese cabbage and replace it with a couple of teaspoons of chopped chives.
