How to make the marinade: Mix ⅓ cup soy sauce, 1 tablespoon finely chopped ginger and garlic each, 1 tablespoon oyster sauce and sesame oil each, sugar, ¼ teaspoon red pepper flakes, salt, and pepper in a bowl.

  1. Place chicken cubes in a plastic bag and add half of the marinade to it. Save the rest for later. Let the chicken marinate in the fridge for 60 minutes. Pour it into a large pot and cook over medium heat. After a few minutes, remove the chicken from the pot.
  2. Pour sesame oil into the pot and toss in ½ a sliced onion and preferred vegetables. Sauté until the onions are translucent. Add two packs of noodles to it and pour chicken broth over the mixture. Place a lid on it. Simmer for 5 minutes, or until the noodles are cooked through.
  3. Break up the noodle bricks and add the chicken. Pour the rest of the marinade from earlier. Serve hot.

Chef Tip: Avoid using minced ginger and garlic since they burn too quickly. It gives the chicken chow mein a strong odour which some may find unpleasant. It’s better to chop them finely before using them.
