Whether it is hot or cold, no one can say no to the nostalgic popsicle! If you have always wanted to try these frozen treats at home, we have a recipe for making delicious raspberry coconut popsicles. Don't worry about calories, as they are filled with natural and healthy ingredients. 

List of ingredients: 

  • 1 ¾ cup full-fat coconut milk
  • 2 tbsp sugar (alternatives are honey, stevia, maple, or agave syrup)
  • 1 cup fresh or frozen raspberries 

An easy and flavourful take on the Raspberry Popsicle!

  1. In a large bowl, whisk together coconut milk and sugar. 
  2. Purée the raspberries until smooth using a food processor or hand blender.
  3. Fill up ⅓ of the mold with the raspberry purée. Then, add the coconut and sugar mixture to the rest of the mold. These ratios can be varied according to your likes.
  4. If you want the popsicles to have defined white and red layers, add raspberry purée and freeze it first. Repeat the process with coconut milk.
  5. Cover the mold and add colorful sticks. Freeze them overnight or at least for five hours if your patience is running out.

Chef Tip: Do you like your popsicles creamy? If yes, it is better to use full-fat coconut milk instead of light coconut milk as it is creamier and kicks in more flavor to the popsicles. It also prevents the white part of the popsicles from being too watery.
