  • All-purpose flour - 1 ½ cups
  • Pumpkin purée - ¾ cup
  • Granulated sugar - 2 tablespoons
  • Baking powder - 1 ½ teaspoon
  • Baking soda - 1 teaspoon
  • Buttermilk - 1 ½ cups
  • Eggs - 2, large
  • Cinnamon - 1 ½ teaspoons, powdered
  • A pinch of ground nutmeg
  • Ground ginger - 1 teaspoon
  • Salt - ½ teaspoon
  • Butter - 3 tablespoons, melted
  • Vanilla extract - ¾ teaspoon

  1. Whisk all your dry ingredients together in a large bowl — flour, sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt.
  2. Whisk the pumpkin purée, butter, buttermilk, eggs, and vanilla extract in a different bowl. 
  3. Now, pour your dry ingredients into your wet ingredients. 
  4. Heat a pan or girdle. Drop a teaspoon of butter on the heated pan. Once it melts, spread it around the pan and pour a ¼ cup of your pancake batter onto the pan.
  5. Cook each side for about 1-2 minutes until the sides start to brown slightly. Repeat for the remaining batter. 
  6. Serve with honey, maple syrup, butter, or any other toppings of your liking.

Chef Tip: If you want your pancakes to be more fluffy, separate your egg whites, beat them until they form stiff peaks, and mix them with the remaining ingredients.
