- Preheat your oven to 350°F (177°C).
- Start with the topping. Melt the butter and sugar together in a pan or a microwave. Do this till the mixture is light brown.
- Pour your butter and sugar mixture into a greased baking pan. Set it aside to cool.
- Once cooled, place your pineapple rings in this pan. Right in the center of each pineapple ring, place a maraschino cherry. Save the juice from the can for later. Set the pan aside.
- Now, for the cake. Cream the softened butter and sugar together using an electric mixer for about 4-5 minutes. Add in the eggs and beat for another 2 minutes.
- In another bowl, mix the flour, baking powder, and salt.
- Now, add the dry ingredients and the pineapple juice alternatively, in batches, to the butter and sugar mixture. You will end up with a thick batter.
- Pour this batter into the baking pan that has the pineapples and melted butter, and sugar.
- Bake for 45 minutes or until done. Check for readiness by inserting a toothpick or a fork into the cake. If it comes out clean, the cake is ready.
- Let the cake cool for some time and then invert onto a serving plate or cake stand.
Chef Tip: Make sure you let the cake cool for some time. Otherwise, your cake will crumble, and you don’t want that.
