Soft, Buttery, Pineapple-y Goodness!

  1. Preheat your oven to 350°F (177°C).
  2. Start with the topping. Melt the butter and sugar together in a pan or a microwave. Do this till the mixture is light brown.
  3. Pour your butter and sugar mixture into a greased baking pan. Set it aside to cool.
  4. Once cooled, place your pineapple rings in this pan. Right in the center of each pineapple ring, place a maraschino cherry. Save the juice from the can for later. Set the pan aside.
  5. Now, for the cake. Cream the softened butter and sugar together using an electric mixer for about 4-5 minutes. Add in the eggs and beat for another 2 minutes.
  6. In another bowl, mix the flour, baking powder, and salt.
  7. Now, add the dry ingredients and the pineapple juice alternatively, in batches, to the butter and sugar mixture. You will end up with a thick batter.
  8. Pour this batter into the baking pan that has the pineapples and melted butter, and sugar.
  9. Bake for 45 minutes or until done. Check for readiness by inserting a toothpick or a fork into the cake. If it comes out clean, the cake is ready.
  10. Let the cake cool for some time and then invert onto a serving plate or cake stand.

Chef Tip: Make sure you let the cake cool for some time. Otherwise, your cake will crumble, and you don’t want that.
