This quick recipe will tell you how to make coconut donuts in no time. Moist cake, with coconut in every layer — these donuts are perfect as a breakfast treat, dessert, or tea-time snack.

For the Donuts: 

  • Cake flour
  • Baking powder
  • Salt
  • Sugar
  • Unsalted butter
  • Vegetable oil
  • Eggs
  • Coconut milk
  • Coconut extract
  • Vanilla extract
  • Lemon juice

For the Icing:

  • Icing sugar
  • Milk
  • Butter
  • Coconut extract
  • Salt
  • Toasted & shredded coconut

 

Melt-in-your-mouth, delicious coconut treat!

  1. Preheat your oven to 400 °F (200 °C). Grease a donut pan with butter or cooking spray. 
  2. Grab a bowl and use an electric mixer to whisk together the cake flour, baking powder, and salt.
  3. In another bowl, use the mixer to cream the butter and sugar together. Add in the vegetable oil.
  4. Add the eggs to the butter and oil mixture, one at a time, and the coconut and vanilla extracts.
  5. Slowly sift in a third of the flour mixture till combined and then add in half of the coconut milk and the lemon juice. 
  6. Add another 1/3 of the flour mixture followed by the remaining coconut milk. 
  7. Sift in the remaining flour mixture and whisk till combined.
  8. Transfer the batter to a large piping bag. Cut the tip, and pipe the batter into the prepared donut pan. 
  9. Bake the donuts for 8 to 11 minutes. Let them cool in the pan for a couple of minutes, and then transfer to a wire cooling rack. 
  10. Now, for the glaze, whisk the icing sugar, milk, butter, coconut extract, and salt until you have a smooth consistency. In another bowl pour in your toasted coconut. 
  11. Once the donuts are cooled, dip them in the icing followed by the toasted coconut. Place them back on the wire rack until the icing sets and the excess drips off. 
  12. Voilà, your delicious coconut donuts are ready!

Chef Tip:  If you can’t get your hands on coconut extract, combine almond and vanilla extracts instead.
