  • 115 grams of unsalted butter
  • 2 tablespoons granulated sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3 medium-sized eggs
  • About 1-liter vegetable oil, for deep-frying
  • Powdered sugar for dusting
  • 2 tablespoons ground cinnamon

  1. In a saucepan, mix in 1 cup of water, 115 grams of butter, granulated sugar, and salt. Bring this mixture to a boil over medium-high heat. 
  2. Remove from heat and fold in the all-purpose flour. Mix thoroughly until no lumps are formed. Return to the stove and cook on medium heat by stirring constantly. Stir till the mixture forms a doughy consistency and leaves the sides of the saucepan. 
  3. Gently transfer the mixture to a stand mixer with a paddle attachment. Beat the mixture on low speed till you are unable to see any steam. Keep beating till it is cooled. 
  4. Increase the mixer speed and add the 3 eggs, one at a time. Mix till the eggs have blended in seamlessly. You will be left with a smooth batter that is not runny but soft to touch. 
  5. Now transfer the smooth churro batter into a piping bag. Heat the oil in a pan suitable for deep-frying on medium-high heat. Gently pipe out churros of your desired lengths into the hot oil. 
  6. Cook for 5 to 6 minutes, or until the churros become puffy and golden-brown. 
  7. After the churros have cooled down, roll the churros on all sides in cinnamon sugar. Serve with a chocolate sauce and enjoy!

Chef Tip: Ensure that the mixture has cooled before adding your eggs. Otherwise, the eggs might scramble from the heat.
