  • Olive oil cooking spray
  • 1 pound boneless chicken breast (cut into cubes)
  • 14-ounce chicken broth
  • 2 cups salsa
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • Freshly chopped cilantro
  • Corn tortillas

Refreshing and flavourful for a light meal!

To make crispy tortillas:

  1. Cut 6 to 8 corn tortillas into thin strips. Preheat a pan and put 1/4th cup oil to fry the tortillas. Now, fry your tortilla in batches and put them on paper towels.
  2. You can also bake your tortilla strips. Just toss them into a bowl and mix with 2 tablespoon oils. Put them on a single layer on a cooking sheet and bake at 350 °F for 15 minutes.

To make chicken tortilla soup:

  1. Take a large pot and heat it over medium flame. Grease the pot with cooking spray.
  2. Add the cut pieces of chicken and stir until brown for about 10 minutes. Now, add the chicken broth and cumin.
  3. Let the soup come to a boil and then, reduce the flame level. Cover the pot and let the chicken cook for about 20 minutes.
  4. Now, add the salsa, lime juice, and chopped cilantro into the pot. Let the ingredients simmer for around 6 to 10 minutes. Your flavorful chicken tortilla soup is ready!

Chef Tip: You can use leftover chicken breasts to make your chicken tortilla soup recipe. Add extra jalapenos and chilies to make the soup extra-spicy! You can also add ingredients like avocado, corn, and beans to make the recipe more wholesome.
