  • 16 garlic cloves
  • ½ teaspoon black pepper
  • 2 minced sage leaves
  • 2 sprigs thyme
  • 1 bay leaf
  • 4 parsley sprigs
  • 3 beaten egg yolks
  • ¼ cup extra virgin olive oil

French garlic soup - a classic, rich, and creamy garlic soup

  1. Put a pot of water to a rolling boil.
  2. Put unpeeled garlic for 30 sec.
  3. Drench in chilly water.
  4. Now remove the garlic peel.
  5. On the saucepan, add the peeled garlic and all of the ingredients other than the olive oil and egg yolks.
  6. Now boil the above ingredients for 30 min.
  7. Place egg yolks in a big bowl that will ultimately hold the soup while the water is boiling.
  8. Whisk it.
  9. Gently pour a few drops of olive oil, whisking quickly (or use a mixer) until the mixture resembles mayonnaise.
  10. After 30 minutes of boiling, spoon one ladle of broth into mayonnaise and stir well.
  11. Strain the broth into the container holding the soup+mayo blend using a sieve.
  12. Pour into a bowl.
  13. Serve with parmesan cheese, cheese toast, and crispy bread.
