BBQ Chicken Rollups

Bring BBQ to delicious roll-ups wrapped in tender shredded rotisserie chicken, gooey cheese, and seasoning. These bite-sized roll-ups are filled with proteins and loads of sweet n’ tangy flavors.

  • 1 pizza crust (for 1-2 servings)
  • 5 tbsp BBQ sauce (sweet)
  • 1 cup finely chopped/shredded cooked chicken (rotisserie)
  • 2 finely chopped red onions
  • 2 tbsp fresh chopped parsley
  • 1 cup shredded cheddar and mozzarella blend
  • 1 tsp Italian seasoning

  1. Preheat your oven to 325° F
  2. On a lightly floured surface, roll out the crust into rectangles after cutting at seams. When using refrigerated dough, place the bowl in a well-oiled dish, cover and allow to come to room temperature for 1 to 2 hours.
  3. Spread the barbecue sauce. Top with shredded chicken, Italian chicken, cheese mixture.
  4. Rolling the crust, pinching the seams lightly to seal. Spread cooking spray on a baking sheet with the seams facing down.
  5. Bake for 15 minutes in the preheated oven. Sprinkle some more cheese and add more barbecue sauce, if required. Bake for another 5 minutes or so, until the cheese melts.
  6. Garnish with chopped parsley.
  7. Use a spatula to lift off the rolls. Serve immediately.

Chef Tip: You can add your favorite toppings and herbs such as Parmesan cheese, pepper Jack, crushed pineapple, pesto, Italian sausage, mushrooms, peppers, ham, or pepperoni. Instead of pizza crust, you can opt for tortillas for California-style chicken roll-ups.
